ASIAN CHICKEN SALAD with homemade peanut dressing
INGREDIENTS:
3 cups spring mix salad greens
1/4 cup mandarin orange slides
chopped:
cucumber
carrots
red peppers
sugar snap peas
dressing (makes 2 servings):
1.5 tbsp peanut butter
1 tbsp coconut aminos
1 tbsp apple cider vinegar
1/2 tsp lime juice
1 clove of minced garlic
1/2 tsp minced ginger
1/4 tsp truvia brown sugar
optional:
tsp of chilli flakes
